Gastronomic use:

In Spain we can find different varieties of artichoke like Tudela or Violeta, but the “queen” of artichokes is our beloved Artichoke of El Prat. Artichokes are a common ingredient present in Mediterranean cuisine. Artichokes can be cooked, whether boiled, baked, grilled, steamed, fried and battered, boiled and liquefied, in broth and vegetable creams.
